Banana & Apple Muffins

These muffin delights are completely sugar free and are a staple in our snack boxes when we’re out and about. They might only get a C- for presentation, but the taste will make up for it. You can get creative and add some zucchini or carrot to the ingredients.

Banana & Apple Muffins

Ingredients

  • 2 Apples (peeled and grated)

  • 125g Butter

  • 2 Ripe bananas

  • 1 cup Wholemeal flour

  • 1 cup Self-raising flour

  • 1/2 tsp Baking powder

  • 1 tsp Cinnamon

  • 2 Eggs

Directions

  1. Preheat oven to 180°C and prepare muffin tray.

  2. In a small saucepan add the grated apple and butter and cook till the butter has melted and turns a golden colour. About 6 minutes.

  3. Meanwhile, mash the bananas in a large bowl.

  4. Add the flours, baking powder, cinnamon and eggs to the bananas and mix it together.

  5. Add the butter and apple sauce to the banana mixture and mix together.

  6. Spoon into the muffin tray and bake to 18-20 minutes.

Store in an airtight container for up to 3 days. You can also freeze these muffins and juts pop them in the microwave.
