Mini Broccoli Tots

These little broccoli tots are so delicious and are a perfect bite size snack. They taste great and don’t have an overpowering broccoliness to it. Frankie loves them dipped in sour cream, but I think they are great just on it’s own.

Mini Broccoli Tots

Ingredients

  • 1 head Broccoli

  • 1/4 Onion (grated)

  • 1 cup Panko bread crumbs

  • 1 cup Grated cheese

  • 1 Egg

  • 2 tbs Parsley (chopped)

  • Salt & Pepper

Directions

  1. Boil the broccoli till soft, then drain and finely chop the broccoli and the grated cheese and place in a large bowl.

  2. Add the grated onion, cheese, egg, breadcrumbs, parsley and salt and pepper and mix it all together.

  3. Place the mixture in the fridge for 15 minutes or so and preheat your oven to 180°C.

  4. Once the mixture has firmed up, grab about a tablespoon size and shape into little round balls, repeat till you have used up all the mixture.

  5. It helps if your hands are slightly wet and if you squeeze the mixture tight before shaping.

  6. Bake for 15 minutes and serve with some sour cream and fresh veg.

Best eaten immediately. Can be stored in the fridge for up to 3 days.

* You can freeze these too. Just pop in the freezer before cooking for up to 3 months.
