Zucchini Frittata Bites

Zucchini is our favourite vegetable hands down. It’s so versatile and can go in practically any baked or stewed dish. And it has a lovely sweet taste, which makes it easier for little ones to approve. This zucchini frittata is so easy and will only take a few minutes to prepare. We used a cookie cutter to cut out little round shapes, but you can cut into simple slices if you prefer.

Zucchini Frittata Bites

Ingredients

  • 1 Medium Zucchini

  • 6 Eggs

  • 2 tbs Cream or Milk

  • 1/2 tsp Salt

  • 1 cup Mozzarella cheese (grated)

  • 1 tsp Parsley

Directions

  1. Preheat your oven to 180°C and lightly oil a deep baking tray (7” x 11”)

  2. Slice the zucchini into thin rounds.

  3. In a large bowl, crack the eggs and whisk together along with the cream, half the cheese and salt.

  4. Pour the egg mixture into the prepared baking tray, then lay the zucchini slices all over.

  5. Sprinkle the remaining cheese and the chopped parsley over the top and bake for 15-20 minutes.

  6. Let sit for 5 minutes in the tray before slicing.

Best eaten immediately.

* You can freeze these too. Just pop in the freezer before cooking for up to 3 months.
